Sorry this journal entry is ALL over the place, but I have a lot I want to write about and well I am too tired to organize it lol, so information overload;) On to FOOD, I wanted to share this chili recipe with you because I made it this week while my family was in town and EVERYONE loved it. I am also posting a recipe for paleo cornbread to go along side it. With the cold weather FINALLY starting to show itself this is the perfect meal after a long, cold day;)

SNACKS

If I have learned one thing now after heading two Nutrition Challenges, snacks are always the hardest for people to come up with! So I am going to dedicate this blog to SNACKS! With that being said............REMEMBER YOU ARE ESSENTIALLY EATING FIVE SMALL MEALS A DAY. So try not looking at snacks as "snacks" and just as another mini meal;) Maybe that didn't help you at all lol, so let me post some good snack ideas!

*small portion for women larger portion for men


Protein shake-
*6-8oz almond milk (fat)
1 scoop protein powder (protein)
ice (water lol)
cinnamon (naturally fat burner)
*3-4 strawberries or other fruit ending in berry (carb)
handful of spinach (carb GREEN veggie)

Snack 1:
sliced SMALL apple (preferably green) (carb)
*1-2 tblspn almond butter for dipping slices in (fat)
small packet of tuna (protein)

Snack2: Avocado Egg salad
*half-whole avocado (carb)
*1-2 boiled eggs diced (protein)
handful of mixed nuts (fat)

Snack 3: Sweet Tooth Snack
1 small apple cut into small slices (carb)
ground cinnamon
1 tablespoons coconut oil (fat)
2 tablespoons canned coconut milk (fat)
Saute apples in coconut oil and cinnamon until soft. Pour coconut milk over cook until all is warm and then eat!
Add a protein to this by eating a couple of hard boiled eggs or some shredded chicken;)

Snack 4:
Steve's Paleo kits these are amazing and are wonderful for a quick snack!

Snack 5:
Beef Jerky (preservative free and no sugar added) (protein)
handful of mixed berries (carb) topped with the cream off of the top of the coconut milk (fat)

Snack 6:
Mixed berries (carb) topped with unsweetened coconut flakes (fat) and slivered almonds (fat)
-eat some type of protein (hard boiled egg, shredded chicken, beef jerky etc)

Ok so how did you feel as you read through the food list?? Were you thinking "I got this" or did you think "oh my gosh what did I get myself into?"
